German students from BKLM Ahaus at Alba Accademia Alberghiera for a journey through the culinary and wine-making traditions of Piedmont
In September, Alba Accademia Alberghiera – the department of Apro Formazione specialising in gastronomic and tourism education – welcomed 19 students and 2 teachers from the BKLM Ahaus vocational school in north-western Germany.
The delegation took part in the “Kulinarische Reise – durch das Piemont” course, an exclusive gastronomic training programme coordinated by Sabine Pohl. It was an immersive experience in Piedmontese cuisine and culture, designed to introduce the young participants to local culinary traditions, the secrets of Piedmontese cuisine, and the value of high-quality products from small local producers.
Under the expert guidance of Main Chef Paolo Taricco, the students worked in Alba Accademia’s individual cooking stations, learning techniques for preparing some of the region’s most iconic traditional dishes, including the classic agnolotti del plin. They also learned how to make the most of local ingredients such as Tonda Gentile hazelnuts and Piedmontese Fassona beef. In addition, they had the opportunity to explore the art of Italian fermentation, dough-making and baking by preparing pizza and focaccia.
The practical cooking activities were complemented by a rich programme of educational visits exploring the agri-food sector and the cultural heritage of the Langhe and Roero. The group visited the truffle museum Mudet in Alba, discovered the traditional art of natural milling at Mulino Marino, and learned about the secrets of hazelnut processing at Cascina Barroero.
The programme was rounded off with two visits focusing on the local wine culture: a visit to WiMu, the Wine Museum housed in the Castle of Barolo, and a guided tour at Vite Colte.
Four intense days of educational and cultural exchange came to an end on Thursday, 17 September, with the official presentation of the certificates of participation.
And Alba Accademia Alberghiera’s international commitment does not stop here: in just a few days, another group will arrive, a group of German students from Münster, who are returning to Alba for the second consecutive year to take part in this educational experience.
“Welcoming such a large and motivated international delegation is a great source of satisfaction and confirms the quality of our educational model,” says Antonio Bosio, General Director of Apro Formazione. “We are extremely proud that Alba Accademia Alberghiera continues to establish itself as a leading reference point for culinary education in Europe and internationally. Projects like this demonstrate how Piedmont’s gastronomic and wine heritage can speak a universal language, attracting talent from abroad, bringing cultures together, and creating borderless opportunities for professional growth for young people across Europe.”
